Treats and Desserts

Peanut Butter Cookies

1 cup of peanut butter

1 1/3 stevia/truvia

1 egg

1 tsp of vanilla


Preheat oven to 350. Spray a large baking sheet with light oil spray. In mixing bowl combine peanut butter, egg, vanilla and 1 cup of truvia. Mix well. Roll dough in to balls of desired size. Place balls on cookie sheet and push down with truvia dipped fork ....making a criss cross pattern. You can also roll balls in truvia before making criss crosses. Bake for 12 minutes. Sprinkle with remaining truvia (optional) Cool before removing. Store in airtight container or sandwhich bag.

** Don't overbake. Ovens and altitude changes alter baking times.

** The original recipe calls for splenda instead of truvia or stevia which I don't use but if you include this ingredient in your diet even occasionally it is was is reccommended by Paula Dean!
